Ingredients:
2 cups fresh basil leaves
1/2 cup toasted pine nuts
1/4 cup freshly grated Parmesan cheese (optional)
1/2 cup extra virgin olive oil
1 tablespoon minced garlic
1/2 teaspoon lemon juice
1/4 teaspoon salt, plus more for a smoother pesto
1/8 teaspoon freshly ground black pepper, or more to taste
Salt as per your taste
Instructions:
Blend the pine nuts, lemon juice and garlic in the food processor until they’re finely chopped. Add the basil and blend again. Drizzle the extra virgin olive oil while food processor blade is running. If you are not making vegan pesto add the Parmesan cheese, and blend again to combine. Add more olive oil to make pesto smoother. Basil Pesto is almost ready, add salt and freshly ground black pepper to enhance the taste and combine again.
To enjoy fresh and green Basil Pesto for a few more days, store it in an airtight container in the fridge. Good thing with pesto is that you can adjust the ingredients according to your taste.
