Vegetarian Thukpa is a popular spicy noodle soup across India. This easy to make one pot meal is a great weekend lunch or dinner option.
One such dish is ‘Tukpa’ a soupy dish that originated in eastern Tibet. It is a combination of Tibetan-style noodles with vegetables or chicken stew in clear soop. there are several combinations, and vegetables can be added according to their taste.

UTENCILS-

Ingredients
Whole Wheat Noodles- 75 g
Refined Oil- 1 tablespoon
Salt- 1 pinch
Light Soy Sauce- 2 teaspoons
Cauliflower- 50 g
Spring Onion- 50 g
tomato-1 unit
Ginger- 3 cloves
Pepper- 0.5 teaspoons
Green Chillies- 2 units
Water- 2.5 cups
Garlic- 3 small pieces
Coriander Leaves- 2 units
1. Heat water in a pan, add water, oil and noodles. Boil.
2. Once it’s done strain the noodles. Keep the noodles stock aside. Spread noodles on a clean plate for it to cool down faster that also prevents it from overcooking.
3. Heat oil in a heavy bottom vessel. Add chopped ginger and garlic. Saute for a few mins.
. Add the vegetables . Saute lightly for a couple of minutes.
5. Season with salt and pepper. Add the stock from noodles.
6. Add soya sauce and simmer for a few minutes for all flavours to blend together
7. Check the seasoning and add the boiled noodles. Cook for a couple more minutes. Serve hot.
For a healthier option, use dal water instead of plain water.
You can use sweet chilli sauce instead of red chilli powder. It gives an enhanced taste.
To add more flavour to the thukpa, add a bit of garam masala and cumin powder to the soup.
You can use any type of noodles such as rice noodles, Hakka noodles or flat noodles in this soup as per your taste.
Noodles absorb the water of the soup and it thickens. Dilute it with water, salt and pepper mixture and simmer the soup or keep the soup consistency watery when cooking. To get the flavour of authentic thukpa noodles, sprinkle spring onions in the end.
Vegetable broth can be used instead of just water for added nutrition.
